  Chicken skin skewers with aged sauce

  Chicken skin is often eaten with salt, but it actually goes very well with sauce.Especially good with Toriishi's sweet, special sauce.However, it's quite fatty and doesn't coat well with the sauce.Therefore, we use Toriishi's unique skewering technique, grilling and letting the chicken rest repeatedly for three days (after three days it will be reduced to about half its original size), allowing the delicious flavor of the chicken skin and our special sauce to mature to the fullest.
